White Tea & Peppermint

White tea, last of the four types of tea recognised by the Chinese, is little-known in the West. It is made by withering fresh young tea buds and leaves, so that their flavours are released by changes arising naturally within the plant rather than by external processes like roasting or fermentation. This gentle handling means that white tea is rich in catechins and other antioxidants.
